Commanding the kitchen the executive chef Francis Paniego, whose resume includes the restaurant Portal de Echuarren, which was awarded a Michelin star. Chef Jose Ramón Piñeiro interprets Paniego’s culinary at the Bistro 1860 Restaurant. Ten years working as his right arm at Echuarren Restaurant made him a most promising culinary star in Spain. Bistro 1860 Restaurant offers a carefully chosen selection of wines and the best traditional basque-riojan dishes, with a few modern touches.
